This year is going to be about numbers.
I've done alot of moving about lately and it feels like the perfect opportunity to set some roots and start some new projects.
This is a bit of a nutty one so hang on to your hats folks:
One baking/making/foodie project a day, for a year...
So we kicked it off, the first day of the year, with a fabulous batch of classic North American pancakes. So let's get started, there's lots of work to do...
Pancakes
130g plain flour
30g sugar
1tsp baking powder
good pinch of salt
130g milk
1 egg, lightly beaten
30g butter, melted (left to cool slightly) plus extra for cooking
Feeds 2-3

Place all your dry ingredients in a bowl and give it a quick mix. Add in the wet ingredients and mix until combined. Set aside to rest for 15 mins.
Melt a dab of butter in a frying pan over a medium heat. Ladle a bit of batter into the pan and cook until the top starts to bubble. Flip and cook until golden brown. Keep warm in an oven at a low temperature (60ºC). Continue cooking until you've used up all your batter.
Serve with any syrups, butters, jams, fruits, meats, cheese you like. They are sooooo versatile. My favorite is served up with a bit of butter and my Uncle Dave's maple syrup (À la Canadienne).
