5. Chilli Oil

There seems to be a heck of a lot of pizza in our lives lately, so I thought it would be nice to spice things up with a bit of homemade oil. So easy, and so worth the 2 minute effort...


Chilli Oil
Makes 250gr

125g olive oil
125g sunflower oil
5 dried chillies, chopped *

Lightly heat 2-3tbsp of the oil in a saucepan. Add in your chillies and allow to slowly simmer for about a minute. Add in the rest of your oil and warm through, but don't overheat otherwise the chillies will burn. Allow to cool and store at room temperature.

* Hey, we all have different tolerances to chillies, so go with your gut. This makes a mild chilli oil, but if you're feeling a bit adventurous, you can always reheat some of the oil with more chilli later on to make it hotter. Remember it will get hotter with time, so give your bottle a shake and try it after a week. If it doesn't knock your socks off then add a bit more.
